For our Maturation series, this Danish Wild Ale spent two years in a 65-year-old Oloroso Sherry Bocoy chestnut cask, blended with a smaller portion aged in an oak Oloroso barrel. The casks impart notes of toasted walnuts, caramelized fruit and warm spices.
